The special thing about these little legumes is that they don’t need to be soaked before cooking. So, simply cover the Pardina lentils with three to four times their volume of water in a pot, bring to a brief boil, then simmer for about 30 minutes over low heat. Once the lentils are tender, drain the water and they’re ready to use.
